Roasted Vegetables

Take a whole bunch of veggies that you like and dice them....we used butternut squash, rutabagas, turnips, onions, potatoes, and broccoli cut into spears ('tree trunk" intact). Toss with olive oil and place in foil-lined baking pan. Sprinkle with salt and pepper to taste. Cover and bake at 350 for about 40-45 minutes, checking occasionally for tenderness. Uncover and continue baking until lightly browned.

Yes, I made this and Eric ate rutabagas AND turnips both...which, of course, he said he did not eat. :)
