Grilled Chicken & Veggies

Marinate boneless, skinless chicken breasts in Italian dressing...I put mine in a Ziploc bag in the morning and let them marinate all day. Can be grilled outdoors or on an indoor grill.

If you want to grill veggies, just cut them into chunks and baste with dressing as they cook. (I steam them for a couple of minutes first so it takes less time to grill.) We like zucchini, yellow squash, corn and onions done as kabobs. Remember to soak wooden skewers in water for at least 30 minutes before grilling so they don't catch on fire.

I serve these with mini-biscuits and herbed butter.

Just stir together some softened butter or margarine with a little garlic salt and dried basil to taste. If you don't make homemade biscuits, you can use the ones from the freezer section.
