Herb Roasted Potatoes

Herb Roasted Potatoes (originally from a church cookbook)

4-5 baking potatoes, peel on
1 tsp. garlic salt
1 tsp. season salt (like Lawry's)
1 tbsp. dry Italian seasoning
1/4 tsp. salt
1/8 tsp. pepper
olive oil

Thoroughly wash and dry potatoes; cut into cubes. Put potatoes in a medium sized bowl and add seasonings. Drizzle a small amount of olive oil over potatoes - not too much or the seasonings won't stick to the potatoes. Toss to coat with seasonings and oil. Line a shallow baking pan with aluminum foil; pour potatoes onto baking pan and spread out evenly. Bake at 375 degrees for 30-35 minutes.

You can use any seasoning combination you like if these don't appeal to you.
