Pumpkin Bread

1 (15 oz) can pumpkin
4 eggs
1 cup oil (I use canola oil)
3 cups sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon cinnamon
1 1/2 teaspoons pumpkin pie spice (or 1 teaspoon nutmeg, 1/2 teaspoon cloves, 1/4 teaspoon ground ginger)

In large mixing bowl, mix together pumpkin, eggs, and oil. Add sugar and mix well. In separate bowl, mix together flour, baking soda, salt, and spices. Add to wet ingredients and mix well.

Spray baking pans with Pam for baking. You can make bread (2 large loaves or 4 mini loaves) or muffins. I usually make one pan of regular size muffins and two mini loaves of bread. Pour mixture into desired baking pan distribution. :)

Bake at 350 degrees until done through. Time will vary based on how you choose to bake...muffins take less time than bread, etc.
